Our story
One counter. Two chapters. A butcher shop has served Jackson Court since 1980 — and since 2026 it has been run by a chef.
Four decades at Jackson Court
The butcher shop at 56 Jackson Court has fed this corner of Doncaster East since 1980 — for most of that time as Brendon’s Quality Meats, becoming Manningham Gourmet in 2024. Generations of locals bought their weekend roasts, sausages and Christmas orders over this counter.
That history matters. A neighbourhood butcher earns trust one order at a time, and we inherited forty-plus years of it.
A chef takes the counter
In 2026 the shop began its chef-led chapter under Will Yu. Will is a qualified chef who has run professional kitchens as head chef and taught hospitality — years spent ordering, breaking down and cooking meat for paying customers.
That changes what a butcher shop can be. Will selects meat the way a chef orders for a kitchen: marbling, feed, ageing and consistency, judged against how a cut actually cooks. And it changes the conversation over the counter — you don’t just leave with the meat, you leave with the method.
“Meat should be chosen by someone who knows what happens after you take it home.”
Done by hand, in house
Whole primals broken down on the block, beef dry-aged in our own cabinet, sausages filled and bacon cured in the kitchen out the back.
